Torrejas 101

DSC05647Mi regalo de Año nuevo es otra receta, esta vez de las torrejas. Los ingredientes son dos panes de yema, de seis a ocho huevos, un bloque de dulce de rapadura, canela, clavos de olor y ron al gusto.

Para empezar se necesitan los panes de yema que se cortan en rodajas lo suficientemente gruesas para que no se deshagan con todo el proceso que les espera.

Por otro lado se separan las claras de las yemas de los huevos.

My New Year’s present is another recipe, this time of “torrejas”, a Honduran traditional dessert. The ingredients are two egg yolk breads, from six to eight eggs, a panela block, cinnamon, cloves and some rum.

At first you need to cut the egg yolk breads into slices thick enough not to fall apart after the process that awaits them.

Separately you separate the whites from the egg yolks.

De forma opcional se pueden incrustar unas cuantas pasas a cada rodaja.

As an optional step you can put some raisins into each slice.

En una olla se derrite un bloque de dulce de rapadura con mucha canela y agua.

In a pot you must melt the panela with a lot of cinnamon and enough water.

Las claras se baten a punto de nieve.

The egg whites must be beat until light.

Luego se incorporan las yemas.

And then you put the egg yolks.

Cada rodaja de pan se sumerge en la mezcla.

Each slice is then submerged into the mix.

Y luego se fríen en aceite hasta que las rodajas queden doradas.

Then the bread slices are fried in oil until they are golden.

El siguiente paso es para quitarles el olor a huevo. En una paila se ponen todos los panes y se les echa agua hirviendo. Se dejan reposar unos minutos, hasta que el agua se enfríe un poco.

The next step is to take away the egg smell of the bread. In a plastic container you put all the slices and submerge them with boiling water. You leave them for a few minutes until the water gets colder.

Pero luego hay que quitarles el agua. No sé qué tan tradicional será esto, pero mi mamá me enseñó a exprimirlas usando dos guantes envueltos en bolsas, limpias por supuesto.

But then you must drain the water out. I don’t know if this is really traditional but my mom taught to to press the slices while wearing gloves wrapped in plastic bags, which must be clean of course.

Los panes se ponen luego en la olla con el dulce derretido. Las torrejas deben quedar sumergidas en el dulce y se ponen a hervir. El dulce queda mejor cuando se le agregan clavos de olor y un poco de ron.

The breads are then placed in the pot with the melted panela. They must be submerged by the liquid and then they must be boiled. The melted panela tastes better when you add some cloves and a little rum to it.

Y voilà! Uno de los platos más tradicionales de esta época.
